5000 Pounds of Butter on a wooden ship would sink it. The time it would take to dissolve the ship would already be sunk and wouldn't rise.

But wouldn't butter already melt inside the cannon when fired?

Not necessarily. I think the proper technique is to form cannonballs with the butter, then freeze them. While the initial cannon blast might be hot, it shouldn't be hot enough to melt the frozen butter. Especially as it is not a prolonged heat.
